It starts with the choice of ingredients, the catch of the day, and carefully selected Italian products, without compromise. Every recipe is born from respect for tradition and a love for doing things well. Because tradition is not repetition, but constant attention.
Our cuisine speaks Italian, with a Tuscan accent. It is a clean, recognizable seafood cuisine, built on technique, experience, and memory. Every dish is prepared with care and method, to bring back the flavors, traditions, and gestures of authentic Italian recipes.
Alongside seafood, you’ll find land-based dishes and our pinsa, made following traditional methods. We also pay close attention to guests with celiac needs, with dishes designed so that nothing is missing, not even pleasure.
I’ Veliero takes its name from the Tuscan dialect word for ‘sailing ship’, but also reflects our approach to cuisine: it requires direction, experience, and respect for the sea.
At the helm is Lorenzo. Trained in Florence, he has built his career across restaurants, teaching, and consulting across several European countries. A sommelier, professional barista, and instructor, he now brings over thirty years of experience to the kitchen. Not to impress, but to ensure everyone eats well, every single day.
